Keto Pork Sausage GoulashThis keto pork sausage goulash was a recipe that I literally stumbled into by accident – and now we make it all the time. This recipe is super simple to make, it has basically no prep, and it’s something that goes well with whatever vegetables you already have cooked in the fridge. My preference is to serve it over chopped spinach, though. A little mozzarella on top is a bonus.

Some friends of ours decided to be kind and gave us some pork sausage. A lot of pork sausage, in fact. And we had no idea what to do with it. I have a deep bench of keto pork recipes (like my Keto Cheeseburger Skillet), but never really found myself with a surplus of pork sausage before.

We cook with ground pork on a regular basis, but this was fresh pork sausage, and it was seasoned. I couldn’t use it in any of my normal pork recipes, like tacos or chili. I considered just frying it up to use as a breakfast meat, but that seemed like cheating.

My grandmother used to make this delicious ground turkey goulash – with elbow noodles, tomatoes, onion and garlic. Obviously we couldn’t have the noodles, but I wanted to try to recreate the dish with the ground pork.

Well… it’s not exactly the same. But it is delicious and simple to make. Read on for the recipe.

Keto Cheeseburger SkilletI’m pretty excited about this keto cheeseburger skillet recipe. I’m going to be honest – one of the things I’ve missed most since switching to a Ketogenic diet is trash cheeseburgers. You know – fall apart, super greasy, loaded with pickles, condiments and cheese, cheeseburgers. Sure, I can grill up some burgers and eat them in a lettuce wrap, but it’s not the same.

In the name of science, I decided it was necessary to bridge that gap and get all the taste and experience of the terrible fast food burgers, without the carbs. We had tried a cheeseburger casserole recipe we found online before, and to be blunt, it was horrible. Free advice: avoid reduced sugar ketchup. It tastes terrible, in my less than humble opinion. It ended up being a soggy, oily mess that tasted like artificial sweeteners. We were barely able to eat any of it. But I knew there had to be a simple way to recreate that fast-food burger flavor.

And with that, the Keto Cheeseburger Skillet was born.

This is a super easy recipe that you almost can’t go wrong with. It’s one of those “I don’t feel like cooking but don’t want leftovers” staples, too. I’d say this is one of the few recipes I’m willing to make after work. (And for the rest of the time? Food prep in advance is where it’s at.)
