This keto pork sausage goulash was a recipe that I literally stumbled into by accident – and now we make it all the time. This recipe is super simple to make, it has basically no prep, and it’s something that goes well with whatever vegetables you already have cooked in the fridge. My preference is to serve it over chopped spinach, though. A little mozzarella on top is a bonus.
Some friends of ours decided to be kind and gave us some pork sausage. A lot of pork sausage, in fact. And we had no idea what to do with it. I have a deep bench of keto pork recipes (like my Keto Cheeseburger Skillet), but never really found myself with a surplus of pork sausage before.
We cook with ground pork on a regular basis, but this was fresh pork sausage, and it was seasoned. I couldn’t use it in any of my normal pork recipes, like tacos or chili. I considered just frying it up to use as a breakfast meat, but that seemed like cheating.
My grandmother used to make this delicious ground turkey goulash – with elbow noodles, tomatoes, onion and garlic. Obviously we couldn’t have the noodles, but I wanted to try to recreate the dish with the ground pork.
